Chili Indian style Serves 2
- 100 g / 3 ¾ oz imitation bacon bits
- 250 ml / 8 fl oz vegetable stock
- 1 yellow bell pepper, chopped
- 1 onion, chopped
- 1 tsp oil
- 400 g / 14 oz chopped tomatoes, canned
- 250 g / 9 oz chick peas, canned
- 1 tsp Garam masala (Indian spice blend)
- perhaps chili flakes
- Soak the imitation bacon bits in vegetable stock for about 10 minutes.
- Brown the onion, bell pepper and the imitation bits in oil. Add the tomatoes and the chick peas.
- Flavour with Garam Masala and chili flakes if you like.
- Serve with rice or Chapati bread or Naan bread.

Tofu with onions Serves 2
- 1 bag Ebly, Tender Wheat (www.ebly.com)
- 2 red onions, sliced into rings
- 200 g / 7 oz tofu, sliced into fine stripes
- 2 tsp vegetable fat
- 100 ml / 6 ½ tbsp red wine
- 1 tbsp red wine vinegar
- 2 tbsp blackberry jelly/jam
- 1 tbsp tomato paste
- salt
- pepper
- Cook the wheat according to the packet instructions.
- Brown the onions and the tofu in the vegetable fat.
- Add the wine and the vinegar.Add the jelly and the tomato paste and flavour with salt and pepper.
- Serve the wheat with the sauce.
